This coffee is produced by Nestor Lasso in Bruselas, Pitalito, Huila, a region internationally recognised for pushing the boundaries of Colombian specialty coffee. Grown between 1,780 and 1,900 metres above sea level, the high altitude and cool climate allow for slow cherry development and exceptional flavour clarity.
The Aji Bourbon variety is prized for its expressive aromatics and vibrant acidity. Processed using a washed method, this lot highlights precision and cleanliness, allowing the varietal character and terroir to take centre stage.
